L\u2019influence de conqu\u00e9rants v\u00e9nitiennes a \u00e9t\u00e9 d\u00e9cisive pour la gastronomie Corfiote, qui a initialement introduit aux populations locales des produits inconnues jusqu\u2019\u00e0 ce temps, produits comme les pommes de terre, les tomates, les haricots, les poivrons, le caf\u00e9 et le chocolat et a r\u00e9v\u00e8le alors les gustatives \u00ab tr\u00e9sors \u00bb qui existaient en Europe apr\u00e8s la d\u00e9couverte de l\u2019Am\u00e9rique, comme les \u00e9pices et le sucre.<\/p>\n<p>La cuisine de Corfou a absorb\u00e9 des influences \u00e9trang\u00e8res, tout en conservant le caract\u00e8re m\u00e9diterran\u00e9en en ces plats en les combinant avec huile, l\u00e9gumineuses, l\u00e9gumes, p\u00e2tes et poissons. Autres conqu\u00e9rants avaient autres influences mineures.On mentionne bri\u00e8vement la contribution des Brettons qui ont apport\u00e9 la bi\u00e8re de gingembre, de kumquat et de patate douce et les Russes qui ont portes l\u2019habitude de friture graisse ou beurre apr\u00e8s que qu\u2019ils ne pourraient pas s\u2019habituer \u00e0 l\u2019huile.<\/p>\n<h2Gastronomie locale><\/h2>\n<p>Dans la mani\u00e8re de cuisson en position dominante est le pot et particuli\u00e8rement r\u00e9pandu est le savouro, qui est un mode de cuisson mais aussi pour maintenir des poissons et des l\u00e9gumes. C\u2019est l\u2019aliment principale des marins, parce qu\u2019il pourrait pr\u00e9server beaucoup de temps et la consommation les prot\u00e9geait du scorbut.<\/p>\n<p>Recettes de poissons et fruits de mer sont r\u00e9pandues \u00e0 Corfou et les plats sont abondants.<\/p>\n<p>Populaire est aussi le \u00ab spetsieriko \u00bb, un m\u00e9lange d\u2019\u00e9pices et d\u2019herbes aromatiques, destin\u00e9 \u00e0 la fabrication des diff\u00e9rentes recettes. Traditionnellement fait par les pharmaciens ainsi que toutes les femme au foyer ou chaque cuisinier a sa propre spetsierika, qui \u00e9taient secr\u00e8tes, et ceux qui faisaient sa nourriture si d\u00e9marquant.
